The Brew Blueprint: Keep It Simple

You don't need a degree to make the best coffee for pour over or a killer French press. You just need good beans and a few basic rules. Here is our "no-nonsense" guide to a great cup:

  1. The Water: Use filtered water if you can. If it tastes good to drink, it’ll taste good in your coffee.
  2. The Temperature: Aim for roughly 200°F (93°C). If you don't have a thermometer, just let the kettle sit for 30 seconds after it boils. (Morton would like me to mention that 205°F (96°C) is his personal ceiling, but let's not get carried away).
  3. The Ratio: Start with 2 tablespoons (10 grams) of coffee for every 6 ounces (177 milliliters) of water. Adjust from there. If it's too strong, add more water. If it's too weak, add more coffee. It’s not rocket science; it’s breakfast.
