Morton, our most meticulous goose, insists on precision. He’ll tell you that the "ideal" temperature is generally between 195°F (90°C) and 205°F (96°C). But we know not everyone wants to stand in their kitchen with a digital thermometer like they’re performing a lab experiment.
Enter the traditional Chinese method of "eye-balling" water temperature. By watching the bubbles in a glass kettle, you can hit your target temperature with surprising accuracy.

1. Shrimp Eyes (~155°F / 70°C)
These are tiny, pinhead-sized bubbles that form at the bottom of the kettle. The water is beginning to whisper.
Best for: This is generally too cool for coffee, but it is the perfect playground for Pip’s Curious Collection, specifically delicate green teas or white teas.
2. Crab Eyes (~175°F / 80°C)
The bubbles have grown to about the size of a crab’s eye. You’ll see vertical plumes of steam rising more aggressively.
Best for: Delicate light roasts where you want to emphasize bright acidity without any bitterness, or for a very smooth Moroccan Mint Green Tea.
3. Fish Eyes (~185°F / 85°C)
Now we’re getting somewhere. The bubbles are larger, roughly the size of a marble, and they begin to break away from the bottom and rise slowly.
Best for: Aeropress enthusiasts or those who prefer a slightly cooler, "sweeter" brew for their morning cup.
4. String of Pearls (~195°F / 90°C)
This is the "Goldilocks" zone for most coffee. You’ll see continuous streams of bubbles rising to the surface, looking like a necklace of translucent pearls.
Best for: Standard pour-overs (V60, Chemex) and the French Press. It’s hot enough to extract the full flavor profile of Gerald’s Reserve without over-extracting.
5. Raging Torrent (212°F / 100°C)
A full, rolling boil. The water is agitated, loud, and angry.
Best for: Black teas or cleaning your drains. Generally, you should avoid pouring a Raging Torrent directly onto your fresh grounds. Let it sit for about 30 to 60 seconds until it settles back down to a String of Pearls.
