But even the most dedicated coffee enthusiasts: and the most discerning of geese: eventually find themselves wandering toward the quieter, more contemplative side of the beverage world. Enter Pip, our resident curious explorer and the visionary behind Pip’s Curious Collection.

While Gerald is busy making sure every single bean meets his impossibly high standards (he once rejected an entire shipment because a bean "looked at him funny"), Pip has been quietly curating a different kind of magic. She’s the one who reminds us that while coffee is a bold statement, tea is an intricate conversation.

The Brew Blueprint

To the uninitiated, brewing tea might seem like a simple matter of dunking a bag into hot water and waiting. To the "flock" at Silly Goose Roasters, that approach is practically a scandal. We apply the same specialty quality standards to our teas as we do to our coffee. This isn't just about throwing some dried plants into a cup; it’s about a meticulous approach to temperature, timing, and origin.

This is where Morton comes in. If Pip is the explorer finding these hidden gems, Morton is the one standing over the kettle with a stopwatch and a digital thermometer. He understands that the difference between a sublime cup of Jasmine and a bitter, astringent mess is exactly 10 degrees and 30 seconds.

Our collection is expertly roasted and curated to ensure that every leaf, petal, and spice arrives at your door ready to deliver its peak flavor profile. The Emerald Ritual: Ceremonial Matcha

If there is one product in Pip’s Curious Collection that embodies the "specialty quality" ethos, it is our Ceremonial Matcha. This isn't the stuff you find in a mass-produced latte at a gas station. This is the real deal: vibrant, neon-green powder made from the youngest, shade-grown tea leaves.

Matcha is unique because you aren't just steeping the leaves; you are consuming them. This means the quality of the source material is paramount. Pip spent months sourcing a matcha that possessed the perfect balance of umami and natural sweetness without the harsh bitterness often found in lower grades.

The Technique

To prepare it correctly, Morton insists you follow his specific protocol. Start by sifting 0.07 oz (2g) of matcha into a bowl to remove any clumps. Then, add 2 oz (60ml) of water heated to exactly 175°F (80°C).

Using a bamboo whisk (or a very fast hand), whisk in a brisk "M" or "W" motion until a thick, frothy layer of micro-bubbles forms on the surface. This aeration unlocks the aroma and creates a creamy mouthfeel that is truly meditative.

The Spice Route: Masala Chai

For those mornings when you need a bit more "kick" than a green tea can provide, Pip’s Masala Chai is the answer. This blend is a robust, full-bodied black tea infused with a traditional array of spices: cinnamon, ginger, cardamom, and cloves.

Unlike the delicate matcha ritual, Masala Chai is about warmth and complexity. It’s the tea equivalent of a cozy wool sweater. We’ve selected spices that don't just sit on top of the tea but integrate with it, creating a symphony of flavor that stands up beautifully to milk and honey.

To brew the perfect cup, we recommend using water at a rolling boil, around 212°F (100°C), and steeping for 5 full minutes. If you want the full experience, simmer the tea and spices in a mixture of water and milk on the stovetop. It fills the house with an aroma that even Bro Joe (our resident dark roast fanatic) can’t help but admire.

Flora & Fruit: Jasmine and Hibiscus Berry

When the sun is high and you want something lighter, Pip points toward the florals. Our Jasmine tea is a masterclass in subtlety. The green tea leaves are scented with fresh jasmine blossoms, resulting in a cup that is aromatic and refreshing. It requires a gentler touch: don't go above 185°F (85°C), or you’ll lose those delicate floral notes.

Then there is the Hibiscus Berry Tea. This is a favorite of the flock because it is naturally caffeine-free and packs a punch of tart, fruity flavor. It features hibiscus, rosehips, and orange peel, creating a deep crimson infusion that is just as good iced as it is hot.

Our Hibiscus Berry (which Pip occasionally sneaks into Morton’s collection for "color") is a testament to our commitment to variety. It’s organic, bold, and unapologetically bright.

Tropical Serenity: Peach Paradise

Finally, we have Peach Paradise. This is Pip’s personal tribute to summer. It’s a blend that combines the sweetness of dried peaches with a crisp tea base. When you open the bag, the scent hits you like a warm breeze on a tropical island: or at least what a goose imagines a tropical island smells like.

This blend is particularly versatile. Morton likes to steep it at 190°F (88°C) for 3 minutes for a warm, comforting afternoon break. Pip, however, prefers it cold-brewed in the fridge overnight. The slow extraction brings out the natural sugars in the peach without any of the tannins.
